Christmas Cookies with EVOO

1: Preheat oven to 350°F.

2: In a medium-sized mixing bowl, add the eggs and extra virgin olive oil from Spain and mix until well combined.

3: Add the vanilla cake mix to the wet mixture and mix until well combined.

4: In a separate small bowl, mix the sugar and cinnamon.

5: Roll the dough into balls and roll them in the cinnamon sugar mixture.

6: Place the coated balls onto a baking sheet and bake for 10-12 minutes.

7: Take out, let them cool, and enjoy!
