1: To a small dish, assemble the crust by adding the cookies and coconut oil, mixing and mashing until a moist, powdery crust forms. Then pat the crust down and refrigerate for 10 minutes while you assemble the cheesecake center.

2: To a separate small bowl, add all the ingredients listed under ‘cheesecake center’ and mix until well combined. Then pour over the crust and refrigerate for 30 minutes to an hour.

3: Take out, top with crunchy nut butter or cookie butter, garnish with biscoff crumbs, a cookie, and enjoy!
